LOW CARB EGG MCMUFFIN

Mix in a bowl,
1 Tbsp soft butter
1/8 C Flaxseed meal
1/8 C Almond meal (Can use all flaxseed or all almond meal if you would rather)
1/4 Tsp Baking powder
1 egg
You can add sweetner if you wish, but I don't like it when I make it to use with eggs. Can also add nuts
Mix well and pour into a greased cup/mug and microwave on high for 1 minute (I use a custard bowl.)
When it's finished, turn out on a plate and let cool enough to handle and cut it in half and butter.
Make the egg, breaking the yolk. I tilt the pan and keep pushing it together to keep it from spreading too wide.
I steal one of Stevebert's breakfast sausage patties and heat it in a frying pan.
Put it all together with a piece of cheese and you have a wonderful egg mcmuffin.

CHICKEN NUGGETS

 16 CARBS & 14 FIBER

Cut up boneless chicken in bite-sized pieces
Beat two eggs in bowl
In another bowl, add almond flour plus spices
     You can do Italian with Italian seasoning and garlic
      What ever seasonings you like. I use sea salt, pepper, garlic pepper and lemon pepper

Heat oil in a pan
Dip pieces of chicken in the egg then in the seasoned flour
Fry until nice and brown.

Or bake for 10-15 minutes at 350 degrees  Or if your oven is hotter, until nice and brown and crispy

Can use BBQ sauce or honey for dipping.
