Frittata 
I had never tasted one, but I found a recipe for a frittata. Made one for lunch. It says to put into two frittata dishes. I made it in a cast iron frying pan. It was great. I had all the ingredients, too.

l tbsp butter or oil 1/2 onion chopped 1 cup chopped kale or spinach Clove, chopped (I used dried) Mushrooms chopped 4 eggs 1/2 - 1 Cup grated cheddar cheese" Season to taste *Optional, chopped green pepper Oven 400 degrees In the skillet sautee onion (and pepper) until softened. Add Kale and garlic Stirring until softened down Whisk eggs and cheese and seasonings Add to pan with kale Bake 10 minutes Cut into fourths
